First this is what you will need.

Next you will need to quarter the tortillas. I take a good stack, actually 2 stacks.
Then in the pan I already had some olive oil heating up. At this point your are going to soft fry the tortilla pieces in the pan. Stir them until coated in the oil and until they get a little brown.
Okay, now that your tortillas are somewhat firm, you will now add the enchilada sauce. Mix the sauce in with the tortillas until they are all coated. Go ahead add more sauce! I don't like mine dry.
Time for the cheese! No I didn't use the whole block of cheese that you saw in the first picture. I only cut a small piece off to shred it.
