Recipe - Spinach Feta Quinoa Cakes

Okay, so as you know I've mentioned that we are trying to eat not as much meat and more veggies and grains. Well I've been pinning a bunch of meatless meal recipes so that I have ideas of what to make. Yes I actually make what I pin. Crazy I know! haha Well I had pinned a quinoa recipe and actually made it for dinner Monday night.

This is my first time cooking with quinoa and I was impressed at how well it turned out. If you don't know what quinoa is it is a small seed like grain that is very high in protein.

You can cook it just like rice, so I used my rice cooker. It is very bitter grain so you want to make sure that you wash it first before you cook it. When I cooked it I used 1 cup water and 1 cup chicken broth for added flavor, for 1 cup of quinoa.

Okay now on to the recipe I found. (sorry I forgot to take a picture of what I made, we were starving and it smelled so good that we just gobbled it up, haha) As I said before I found the recipe on pinterest but I did a little modification to it.

Quinoa Cakes

Ingredients:


1 tablespoon extra-virgin olive oil
1/2 cup finely chopped onion {i used a red onion}
2 garlic cloves, finely chopped {1tsp of already minced from jar}
5 ounces chopped baby spinach
2 large eggs, beaten
1 1/4 cups cooked quinoa {to make bigger cakes I used 2 1/2 cups}
2 ounces crumbled feta cheese
1 tablespoon chopped fresh dill
1/4 teaspoon grated lemon zest
1/4 teaspoon freshly ground black pepper
1/2 cup bread crumbs {i used Italian flavored bread crumbs}


Directions:


Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring often, until softened, about 4 minutes. Add the spinach and cook, stirring often, until wilted, about 3 minutes. Transfer the mixture to a medium-size bowl.

Add the eggs, quinoa, feta, dill, lemon zest, and black pepper and mix well. Mix in the bread crumbs and let the mixture sit for a few minutes to allow the bread crumbs to absorb some of the moisture.

Heat the panini press to medium-high heat.

Form quinoa patties about 5 inches in diameter and 1 inch thick. Place the patties on the grill, in batches if necessary, and close the lid. Grill the patties until they’re cooked through and browned on the outside, 4 to 5 minutes. Serve warm. (the Italized size is how I made mine)

*the girl that made this recipe serves a yogurt dill sauce with it and you can find the recipe here. She also makes them smaller but I made mine bigger.*

We had ours with avacado and salsa and it was super yummy!

Homemade Baby Food

For those of you that follow me on FB and Instagram have seen my recent posts of my batches of homemade baby food. Well some of you have asked how I do it so I thought that I would share a post of what I do and how I do it.

I love making homemade baby food. You know the saying the older you get the wiser you are. Well in this case it's true! I wish I had know about making my own baby food 8 1/2 years ago when I had my son!! At that time we were full time students both working part-time, making my own food would have saved us a bunch of money! Well now we are no longer students and both are working full time with 2 kids now and we are still finding ways to stretch our dollars. Making baby food is now one of them.

I can make a whole lot for a lot less than what those little jars of food cost. I can also make up my own combos and also expose little missy to different fruits and veggies that are not available in the prepackaged form, such as beets, mangos, cauliflower, you get the idea.

So how do I go about making it you ask well here's what you will need.

- steamer
- hand blender
- ice trays
- pot(s) {for frozen items}
- baggies (sandwich size and quart size)

First wash, peel, de-seed (if necessary) then chop. If you are using frozen items, such as peas cook as you normally would in a pot with a little bit of water. For fresher items, place into your steamer.



Let them cook and cool.

Once they have cooled blend them up. I like to use a little bit of water so that it's not so thick.



Next pour into your ice trays.


Then put into freezer. Once they have been frozen for about a day pop them out of the trays and place them into labeled baggies.


Tada! You now have fresh homemade baby food for less than what it would have cost you to buy it pre-made.

Some of my other tricks to save money on baby food is buying a big jar of unsweetened applesauce and those fruit flavored applesauces like these.

 

Or already pureed frozen squash, that I will defrost and divide up into the ice trays.

    Jewelry: All Things Pretty Boutique
