Fall Series - Channon

Today's guest is another one of my co-workers and her name is Channon. She is our resident baker! haha She is always bringing yummy treats to share with us and they are seriously ridculously good! So let me turn the time over to her with her yummy recipe.

Mini Pumpkin Cheesecakes

Makes Aprox. 24

Crust

4 graham crackers
3/4 cups sugar
1/2 tsp nutmeg
1/2 tsp clover
1 tsp cinnamon
1/2 tsp ginger
2-3 tbsp unsalted butter cubed

Crumb graham crackers. Using a fork, mix in sugar, nutmeg, clover, ginger, and cinnamon. Begin with combining 2 cubes of butter into the graham cracker crumbs. Use fingertips to combine ingredients. If needed continue adding butter 1 cube at a time until mixture easily presses together. Press mixture into muffin pan and set aside.


Pie Filling

16 oz cream cheese
2 cups sugar
2 tsp vanilla extract
3 eggs
16 oz pumpkin filling
3 tsp cinnamon
3/4 tps nutmeg
1/2 tsp ginger
pinch of clover

Preheat oven to 325. In a large bowl beat the cream cheese and sugar until well blended. Beat in the egg, and vanilla. Mix well after each ingredient is added. Combine the pumpkin, cinnamon, nutmeg, ginger, clover. Pour mixture into muffin tin. Fill 3/4 of the way up. Place in oven and cook for 30-45mins. Let cool to room tempature then place in fridge.
