Recipe of the Week: Cafe Rio

Well this is more like the meal of the week. Last night I prepared a yummy meal Cafe Rio style. It was a big hit! Everyone loved it and there was even left overs for me to take into work. Score!! I found several recipes for the pork, rice and dressing, which were all the same, and wanted to share them with you so that you can make your own cafe rio meal at home.

Sweet Pork

2 pounds of pork {I used a pork tenderloin}
3 cans Coke (not diet) {I used a 2 liter of coke and calculated using the ounces to cup conversion}
1/4 c. brown sugar
dash garlic salt
1/4 c. water
1 can sliced green chilies
3/4 can enchilada sauce {medium spiciness}
1 c. brown sugar

Put the pork in a heavy duty Ziploc bag to marinade. Add about a can and a half of Coke and about 1/4 c. brown sugar. Marinade for a few hours or overnight.

Drain marinade and put pork, 1/2 can of Coke, water, and garlic salt in Crock Pot on high for about 3-4 hours or until it shreds easily. (I usually cook on low all day long.) Remove pork from Crock Pot and drain any liquid left in the pot. Shred pork.

In a food processor blender, blend 1/2 can Coke, chilies, enchilada sauce, and brown sugar.

Place shredded pork and sauce in Crock Pot and cook on low for 2 hours.

{Since I was at work all day and wouldn't have time to drain and cook for an additional 2 more hours, I added everything all at once and set the crock pot to 8 1/2 hrs. It turned out just fine.}

Cilantro Lime Rice

2 Tbsp. oil
4 c. long grain rice (6 c. water)
1 bunch cilantro, finely chopped
juice of 2 limes {I used lime juice from the bottle, which I already had, 1 Tbsp}
2 tsp. crushed garlic

Heat oil in a large skillet. Add rice, cilantro, and garlic. Saute 3-5 minutes, stirring frequently. Add water and lime juice and bring to boil. Then reduce heat and simmer until all the liquid is absorbed by the rice (about 20 minutes). You can also use a rice cooker if you have one.

{I used my rice cooker and eliminated the oil}

Creamy Tomatillo Dressing

3 tomatillos, peeled and cut into 1/4's
juice of 1/2 lime {1 Tbsp if using from the bottle}
1/2 c. buttermilk
1/2 c. mayo
1/2 c. sour cream
1 pkg. dry ranch buttermilk dressing {regular ranch dry pack works good too}
1 c. fresh chopped cilantro
6 green onions, with ends
2 cloves crushed garlic {1 tsp if using from the jar of garlic}
3 t. sugar
1 jalapeno, sliced thin

Directions: Mix well in blender. Refrigerate for at least one hour.

Black Beans: I cooked mine in a crock pot all day.

Additional Items

Grated cheese, sour cream, chopped up Romaine lettuce, tortillas and salsa.
